Internationally acclaimed British Chef David Nicholls is bringing the world’s greatest chefs to a table near you, and all for a charitable cause that strikes close to home, in OFF DUTY: The World’s Greatest Chefs Cook at Home (William Morrow; March 2006; $39.95). This unique cookbook was inspired by Nicholls’ nineteen year old son, Daniel, who was tragically paralyzed in a swimming accident while enjoying his gap year in Australia. Following the accident, the cooking industry elite rallied around Nicholls, supporting him in his mission to found The Nicholls Spinal Injury Foundation in order to help Daniel and the millions of others like him.

For this determined father’s OFF DUTY crusade, forty-eight of today’s most talented chefs from around the globe contributed 144 recipes (48 starters, 48 main courses, and 48 desserts). The recipes serve as a palate-pleasing foray into each chef’s private life, reflecting the types of food each chef prefers to cook and enjoy while “off duty” at home.

OFF DUTY offers a savory range of vegetable, fish, and meat dishes to please casual to discerning tastes everywhere. From Nigella Lawson’s Pumpkin, Radicchio, and Feta Salad, Wolfgang Puck’s Roasted Garlic and Wild Mushroom Pizza, and Thomas Keller’s American Pot Roast to Jamie Oliver’s Individual Raspberry Praline Meringues, Jean-Georges Vongerichten’s Gingered Crème Brûlée, and Delia Smith’s Chocolate Mascarpone Cheesecake, Nicholls has compiled an heirloom collection with a generous helping of culinary star power.

Through the money raised from OFF DUTY, Nicholls’ organization will provide desperately needed funds to the cutting edge arenas of spinal cord injury research that are producing groundbreaking and life-altering discoveries on a daily basis. The Nicholls Spinal Injury Foundation will directly assist three main objectives:

* Spinal research and development
* Stem cell research and surgery
* Rehabilitation for patients of spinal injury when a cure has been developed

Firmly established as one of the world’s finest hotel chefs, David Nicholls is currently the Executive Chef of the Mandarin Oriental Hyde Park, London, where he also created two new contemporary restaurants and a dynamic new bar. Nicholls has also served as a chef at several other of London’s finest hotels and restaurants, including most notably The Ritz, Intercontinental, and The Royal Garden.
